Tomatillo Salsa or Salsa Verde brings a refreshing taste to Mexican dishes, shrimp, chicken or pork and of course, is great with baked chips!
12 tomatillos, husks removed
4 serrano or jalapeno peppers, finely chopped (seeded if desired)
1 small onion, finely chopped
1 tablespoon lime juice
1/4 cup chopped fresh cilantro
1 clove garlic, minced
1 large tomato, seeded and chopped
1 Place tomatillos in a saucepan, cover with water and bring to a boil. Cook about 15 minutes or until tender.
2 Place tomatillos, peppers, lime juice and garlic in a food processor or blender and process until smooth. Add onion and cilantro and pulse a few times.
3 Pour into a bowl and stir in tomatoes. Goes well with tacos, black beans and low-fat quesadillas!
4 Yield: 2-3 cups. Serving Size: 1/2 cup.
