This recipe makes a perfect appetizer or side dish. Grilling intensifies the sweet flavor of the red bell peppers.

| 1 | Mix cheese, pine nuts and basil in a bowl. |
| 2 | Grill peppers on a lightly greased grill for about 5 minutes or until crisp-tender, turning once. |
| 3 | Remove peppers from grill. Spoon mixture into each pepper. Grill for 2-3 minutes more or until cheese is soft. |
| 4 | Yield: 16 pepper boats. Serving Size: 2 pepper boats. |
