Sweet and spiced with ginger, these lean pork loins make a great weeknight dinner that is easy and healthy. Try something different tonight!
Ingredients:
1/8 teaspoon black pepper
1 tsp dried sage
1 pound boneless center-cut pork tenderloin chops (about 4 ounces each)
1 teaspoon olive oil
1/3 cup apricot-pineapple jam
1/3 cup sweet white wine
1 tsp fresh minced ginger
Directions:
1 Rub pork loins with black pepper and sage.
2 Heat olive oil in a large non-stick skillet over medium-high heat and add pork loins.
3 Cook about 3-5 minutes on each side or until browned or internal temperature reaches 160 F. Remove pork from pan and keep warm.
4 Combine jam, wine and ginger in a small bowl and stir well with a whisk. Add mixture to pan and simmer about 4 minutes or until thickened.
5 Return pork loins to pan and cook 1-2 minutes to coat.
6 ENJOY!
