Bring the Southwest home with these colorful and zesty tostadas.
Ingredients:
1 tbsp olive oil
1 pound chicken breast, cut into chunks or strips
1 tsp cumin
1 tsp garlic powder
2 tsp chili powder
1 cup frozen corn, thawed
1 red bell pepper, diced
1 cup lower-sodium black beans, drained
10 cups chopped Romaine lettuce
2 green onions, sliced
2 tomatoes, diced
1 ¼ cup shredded reduced-fat cheese
5 corn tortillas
½ cup fat-free sour cream mixed with 1 tsp taco seasoning
Directions:
1 Cook chicken breast in olive oil with cumin, garlic powder and chili powder until chicken is cooked through (no longer pink in the middle).
2 Transfer chicken to a large bowl and add thawed corn, black beans, red bell pepper, green onions, tomatoes, lettuce and cheese. Toss to combine.
3 Toast corn tortillas until lightly browned in a toaster oven or oven.
4 Divide salad-chicken mixture evenly over corn tortillas and top with sour cream mixture.
5 Use salsa as salad dressing or thin sour cream with a little milk.
6 ENJOY!
