4 skinless, boneless chicken breast half
salt and pepper to taste
8 tablespoons nutritional yeast
4 oz frozen chopped spinach, thawed and drained
1 clove garlic, minced
1 egg, beaten
1 cup low sodium chicken broth
1 Preheat oven to 350°F.
2 Season chicken breasts with salt and pepper to taste. Slit open on the side for stuffing; set aside.
3 In a medium bowl, combine the nutritional yeast, spinach, garlic and eggs. Mix well and stuff chicken breast with the mixture; secure with toothpick and place stuffed breast in a lightly greased 9x13 inch baking dish. Pour chicken broth over chicken.
4 Bake at 350°F for 45 to 60 minutes, or until chicken is cooked through and juices run clear
