This creamy soup combines potatoes, corn and smoky green chiles. The end result - a splendid bowl of soup!
5 large potatoes, peeled and diced
1/4 cup diced ortega chiles
1/2 cup diced red bell peppers
1/2 cup diced green bell peppers
4 garlic cloves, minced
1 onion, chopped
1 tablespoon olive oil
3 cups non-fat milk
2 cups fat-free half and half
1 12-ounce can no salt added white cream corn
1 12-ounce can no salt added yellow corn, drained
Pinch of cayenne pepper
1 Cook potatoes in 4 cups water in a large pot, saving water.
2 Saute onions, chiles, bell peppers and garlic in olive oil until tender.
3 Add vegetables to potato pot. Add milk, half and half, corn and cayenne.
4 Simmer on low heat for 30 minutes.
