1 | Peel, chunk, and boil the butternut squash and sweet potatoes until chunks are easily pierced with a knife (maybe 20 minutes), then drain. Over medium heat, sauté potatoes, squash, onion and spices until onion is tender. |
2 | In a large soup or sauce pan, combine potato and squash mixture with broth, stirring to incorporate all ingredients. Bring to a simmer. |
3 | Mix peanut butter with a cup of the hot soup in a small bowl; then return mixture to the soup pot. Add salt and pepper to taste. Garnish with chopped cilantro. |
