Ingredients:
1 teaspoon olive oil
1 cup chopped onion
1 cup chopped green pepper
1 cup chopped red pepper
2 garlic cloves, minced
6 ounces shredded cooked chicken breast (2 breasts)
1 cup frozen whole-kernel corn
1 chopped seeded jalapeƱo pepper
1 teaspoon ground cumin
1/2 teaspoon chili powder
2 (32 oz) containers no-salt-added chicken broth
2 (14.5-ounce) cans diced peeled tomatoes, undrained
1 1/4 cups crushed unsalted baked tortilla chips (about 16)
Directions:
1 Heat oil in a large pot over medium-high heat. Add onion, peppers and garlic; saute 2 minutes. Stir in chicken and next 6 ingredients; bring to a boil. Reduce heat, and simmer 1 hour. Ladle soup into bowls; top with tortilla chips.
