Low-fat Broccoli and Cauliflower Cheese Soup

Have you noticed that more and more restaurants are featuring this favorite soup on their menu? This version is low in fat yet very tasty!
1 stalk celery – finely diced
1 small onion – finely diced
2 cups broccoli – fresh or frozen; chopped
1 cup cauliflower – fresh or frozen; chopped
3 cups low-sodium vegetable or chicken stock
Pinch of black pepper
1/2 cup non-fat yogurt
1/4 cup low-fat cheddar cheese
||Put broccoli, cauliflower, onion and celery and in a medium sized pot.
||Add stock and salt and pepper and bring to a boil. Reduce heat and cook until vegetables are very soft.
||Do not drain. With a hand blender, puree the vegetables in the pot.
||Add the yogurt and cheese to the pot, stirring until well blended and cheese is melted.
