Ingredients:
64 oz of Low Sodium Chicken or Vegetable Broth (Swanson or Kitchen Basics)
2 cloves garlic
1 onion, chopped
1 tbsp extra virgin olive oil
1 package extra firm tofu, chopped
3 cups spinach
3/4 cup gluten free noodles (any kind)
Ginger
Curry Powder
Garlic Powder
Pepper
Sriracha
Directions:
1 In large pot, sautee olive oil, garlic and onions, cook until soft. Add chicken or vegetable broth, add tofu chunks and bring to boil. Season with ginger powder, garlic powder, curry powder, and pepper.
2 Once boiling, add pasta and simmer until cooked. Add spinach and cook for an additional 5 minutes. Add sriracha per taste preference.
