Head south of the border for this low-fat taste sensation! As fun to make as it is to eat!
Ingredients:
1 8-inch low-fat or whole grain tortilla
2 ounces thinly sliced sirloin or flank steak
3-4 tablespoons salsa
1/2 red bell pepper, sliced
1/4 cup red onion, sliced
1/4 cup light cheese, shredded
Romaine lettuce, chopped
Directions:
1 Spread salsa in the middle of the tortilla. Place sliced cooked steak, bell pepper, onion and cheese onto the center of the tortilla and fold in half.
2 Heat the fajita in the microwave for 1-2 minutes or until hot. Add chopped lettuce and additional salsa in the middle (if desired).
3 *TIP* If your meat is not already cooked, simply cook your steak with a pinch of chili powder, salt and pepper in a non-stick frying pan until cooked. A sprinkle of fresh lime juice is a nice addition.
