This minestrone soup adds barely to the fantastic and healthy mix of tomatoes, veggies and beans.
Ingredients:
2 carrots, chopped
2 onions, chopped
3 celery stalks, chopped
2 garlic cloves, minced
1 zucchini, chopped
2 cups kale, chopped
1 28 oz can crushed tomatoes
1/2 cup barley, dry
1 14 oz can chickpeas, drained
1 1/2 cup low-sodium vegetable broth
4 1/2 cups water
1 Tbsp parsley
1/2 tsp thyme
1 tsp oregano
1 tsp ground black pepper
Directions:
1 Combine all ingredients in slow cooker.
2 Cover and cook on low 6-8 hours or until vegetables are tender.
3 ENJOY!
