If you have a lot of extra vegetables laying around and don't know what to do with them - try this veggie filled soup!

1 | Place all ingredients in a large soup pot. Bring to a boil, cover partially and reduce to a simmer. |
2 | Continue to simmer until vegetables are soft, about 30 minutes. Remove bay leaf and serve. |
