If you have a lot of extra vegetables laying around and don't know what to do with them - try this veggie filled soup!
Ingredients:
1 onion, chopped
1 stalk celery, chopped
2 medium carrots, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 medium sweet potato, chopped
2 small zucchini, diced
1 bay leaf
1/2 teaspoon coriander
2 cloves garlic, crushed
5 cups low sodium vegetable broth
1 15-ounce can lower sodium garbanzo beans, drained
Directions:
1 Place all ingredients in a large soup pot. Bring to a boil, cover partially and reduce to a simmer.
2 Continue to simmer until vegetables are soft, about 30 minutes. Remove bay leaf and serve.
3 ENJOY!
