Take tuna salad to a new level by adding beans, dried fruit and veggies! Each bite offers a little crunch and a whole lot of flavor!
Ingredients:
2 6 oz. cans solid albacore tuna, packed in water
1 15 oz. can great northern beans, drained and rinsed
2 green onions, chopped
1 celery stalk, chopped
1 tablespoon light mayonnaise
1 tablespoon pickle relish
1 tablespoon lemon juice
Garlic powder to taste
Chopped green leaf lettuce, about 8 cups
2 tablespoons dried cranberries or golden raisins
Reduced fat vinaigrette dressing, about 4 tablespoons
Directions:
1 Pour drained tuna in mixing bowl. Add beans, celery, green onions, mayonnaise, pickle relish, lemon juice and garlic powder to taste. Mix well.
2 Serve scoop of tuna and bean salad on bed of lettuce and sprinkle with dried fruit. Drizzle reduced fat vinaigrette dressing.
3 ENJOY!
