This protein and fiber rich salad makes a filling and tasty main dish. Try using leftovers for lunch the next day!

1 | Place lentils and water in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until tender. Do not drain. Cool slightly. |
2 | Place lentils, cannellini beans, green beans, onion, celery, and peppers in a bowl. In a separate bowl, combine dressing ingredients. |
3 | Pour dressing over vegetables. Toss gently, cover, and refrigerate overnight. Serve. |
