Forget the high-fat take out. You can make your own healthy version right at home in just a few minutes!
1 pound pork tenderloin, cut in 1/2-inch cubes
1 tsp chopped garlic
1 C low-sodium chicken broth
1 tsp lite soy sauce
1 green bell pepper, cut in strips
2 C sliced celery
1/2 cup sliced carrots
1/2 cup sliced red onion
1 8 oz can pineapple tidbits, packed in juice
2 tbsp cornstarch
reserved pineapple juice
Spray a skillet with cooking spray. Brown pork with garlic.
Add chicken broth, soy sauce, green pepper, carrots, onion and celery. Cover and simmer for 10 minutes.
Meanwhile, drain the pineapple, reserving the juice. Blend cornstarch with reserved pineapple juice and add to the skillet.
Cook, stirring constantly, until mixture thickens. Add pineapple and heat thoroughly. Makes 4 cups.
