Leave the sodium at the store and make your own veggie filled pasta sauce!
Ingredients:
2 tbsp olive oil
1 red onion, chopped
1 zucchini, diced
1 carrot, diced
4 garlic cloves, chopped
4 Roma tomatoes, seeded and diced
1 28-ounce can crushed tomatoes
1 bay leaf
1 rosemary sprig
15 basil leaves, chopped
Black pepper to taste
Directions:
1 Heat oil in a large skillet over medium heat. Add the onion, zucchini and carrot and sauté for 8 minutes. Add the garlic and sauté for about 1 minute.
2 Add the tomatoes, bay leaf, black pepper and rosemary. Cook, uncovered for 15-20 minutes. Remove the bay leaf and rosemary sprig. Add the basil and add more seasonings if desired.
3 Serve over cooked whole wheat pasta or use as a sauce for chicken.
4 ENJOY!
