Okra is practically a Southern staple! Don't be intimidated by using it at home, just try this easy and tasty recipe.
Ingredients:
1/2 cups onions, chopped
2 cups tomatoes, chopped
1 tsp sesame oil
1 cup okra, sliced
2 cloves garlic, chopped
1/2 cup vegetable low-sodium vegetable broth
2 cups brown rice, cooked
1 cup black beans, canned
Directions:
1 In a medium size saucepan, sauté the onions and tomatoes in the oil for 5 minutes.
2 Add the okra, garlic, salt, pepper and bouillon cube. Cook for 15 to 20 minutes.
3 Serve hot over the rice and beans.
4 ENJOY!
