1 | Add olive oil to soup pot. Saute onions till softened. |
2 | Add garlic, mushrooms, carrots, seasonings, white wine, broth and 2 cans water. Bring to boil. |
3 | Add barley and simmer 45-55 minutes till barley is cooked and soup thickens. Can add one more can of water if it becomes too thick. |
4 | Season with salt and pepper to taste. |
5 | Yield: 12 1-cup servings. |
