Rich but delicate - this pasta brings together shallots, mushrooms, white wine and tomatoes. You'll feel like you're in a 5 Star restaurant!
1 tablespoon olive oil
1 cup shallots, sliced
1/2 pound mushrooms, sliced
1/2 cup white wine
1 1/2 cups no salt added tomato sauce
1/3 cup Land O Lakes Fat Free Half and Half Cream
3/4 pound Rigatoni pasta (look for whole wheat!)

Grated Parmesan and fresh chopped Italian Parsley for garnish (optional)
1 Cook pasta according to package directions and set aside.
2 In a large skillet over medium-high heat, saute shallots and mushrooms in olive oil until tender.
3 Add white wine and cook until evaporated, about 2-3 minutes.
4 Add tomato sauce and simmer -about 4-5 minutes. Add cream and simmer another 2 minutes.
5 Combine sauce with pasta and heat until warm. Sprinkle with parmesan cheese and fresh Italian parsley for garnish.
