A crunchy and colorful breakfast wrap is ideal for a satisfying breakfast on the go! Your kids will love it, too!
2 strips turkey bacon, chopped
4 egg whites, slightly beaten (or 1/2 cup egg substitute)
1/4 cup light shredded cheese
2 tablespoon green bell pepper, chopped
2 tablespoon tomato, chopped
1 green onion, sliced
1/8 teaspoon cumin
1/8 teaspoon crushed red pepper (optional)
1 warmed whole wheat tortilla
1 In a medium non-stick skillet cook bacon until crisp.
2 Add green pepper, cumin and crushed red pepper, if desired. Cook for 3 minutes.
3 Add egg whites or egg product; cook for 2 minutes.
4 Stir in tomato, green onion and cheese. Spoon onto tortilla and roll up. Top with salsa if desired.
