|1||In a large covered pan, boil potatoes until tender, about 20 minutes. Drain and transfer to a large baking dish sprayed with cooking spray.|
|2||In a small saucepan, combine brown sugar, orange juice, light butter and ginger. Cook until butter melts; stir well and pour over sweet potatoes.|
|3||Bake at 375, uncovered for about 35 minutes until potatoes are tender and caramelized, stirring once.|
