Liven up your holiday dinner with this fantastic and perfectly sweetened dish! The ginger adds a little spice and zing to vitamin-rich sweet potatoes.

1 | In a large covered pan, boil potatoes until tender, about 20 minutes. Drain and transfer to a large baking dish sprayed with cooking spray. |
2 | In a small saucepan, combine brown sugar, orange juice, light butter and ginger. Cook until butter melts; stir well and pour over sweet potatoes. |
3 | Bake at 375, uncovered for about 35 minutes until potatoes are tender and caramelized, stirring once. |
