This holiday season - enjoy some warm, bubbly, sweet apple-cranberry crisp. Your kitchen will smell wonderful and your family will be delighted!
1 cup fresh cranberries
1 cup peeled, chopped and cored apples
2/3 cup sugar, divided
1/3 cup pecans, chopped
1 egg
1/4 cup flour
1/4 cup old fashioned oats
3 tablespoons light margarine or spread, melted
1 Preheat oven to 325. Spray an 8” pie pan with cooking spray. Put cranberries and apples in pie pan. Sprinkle with 1/3 cup of sugar and pecans.
2 Beat egg well; gradually adding 1/3 cup sugar. Beat until foamy. Add flour, oats and melted light margarine. Beat until thoroughly blended.
3 Spread over apple-cranberry mixture. Bake for 45 minutes. Crust should be golden brown.
4 Serve with light whipped cream or low-fat frozen yogurt if desired.
