The addition of zucchini and cabbage to classic minestrone soup makes this bowl of soup extra yummy!
Ingredients:
3 cups water
1/2 cup each: carrot, celery, onion (chopped)
2 cloves garlic, minced
1 tsp each: basil and oregano, crushed
1/8 tsp. pepper
1 15 oz. can red kidney beans
1 15 oz. can tomatoes, chopped
1/2 cup cabbage, coarsely chopped
1/2 cup zucchini, sliced
1/2 cup pasta, uncooked
Directions:
1 In a large sauce pan, combine water, carrots, celery, onion, garlic, basil, oregano, and pepper.
2 Bring to boil, reduce heat. Cover and simmer for 15 minutes.
3 Drain can of kidney beans and add kidney beans, tomatoes, cabbage, zucchini and pasta. Return to boil, reduce heat. Cover and simmer for 5 to 10 minutes, until pasta is tender.
4 ENJOY!
