Fresh dill, lemon zest, crab and cauliflower compliment each other is this creamy soup recipe. The red bell pepper adds a touch of bright color.
Ingredients:
2 cups chopped cauliflower
2 cups low sodium vegetable broth
1/2 cup diced red bell pepper
1/2 cup chopped onion
1 teaspoon lemon zest
1 1/2 cups fat free half and half
3 tablespoons flour
8 ounces cooked crab meat (fresh or imitation)
2 tablespoons chopped fresh dill
Directions:
1 In a large soup pot, combine broth, cauliflower, bell pepper, onion and lemon zest.
2 Bring to a boil; reduce heat to a simmer. Cover and simmer for 6-8 minutes or until cauliflower is tender.
3 Stir together fat free half and half and flour. Add to cauliflower mixture.
4 Stir in crab meat and dill. Heat until warm.
5 ENJOY!
