Prepare a tasty homemade meal in one skillet. This recipes combines nutritious greens with white beans, tomatoes and brown rice.
1 package (10 ounce) frozen mustard greens, collard greens or spinach
1 can (32 ounces) no salt added stewed tomatoes
1 cup cooked brown rice
1 can (15 ounces) ounce white beans, rinsed and drained
Pepper to taste
1 teaspoon dried basil
1 teapsoon garlic or onion powder
1 Steam greens in the stewed tomatoes in a saucepan over medium - high heat.
2 Cook greens 10 to 20 minutes, until they are as soft as you like them. Stir gently.
3 Add the rice, canned beans, and seasonings. Cook until heated through.
4 Serving Sizes: 1 1/2 cups.
