Start enjoying potatoes again with this colorful stuffed spud! Easy enough to take for lunch!
Ingredients:
1 small baking potato (size of a computer mouse)
1/4 cup nonfat plain yogurt
2-4 tablespoon salsa
1 cup steamed fresh or frozen vegetables
Directions:
1 Wash potato under cold running water to remove dirt. Prick with a fork and cook in the microwave until done, about 5 minutes. Cut in half and fluff with fork.
2 Meanwhile, heat the veggies in a microwave (about 2-3 minutes) or in a steamer on top of the stove.
3 Top potato with veggies, cheese, salsa and sour cream. Season to taste with Mrs. Dash and pepper if desired. Eat right away or wrap in foil for later.
