Radicchio adds a beautiful color contrast to salads as well as a crispy texture. Use fresh mozzarella for a great summer salad.
Ingredients:
1 cup chopped radicchio
3 cups chopped green leaf lettuce
4 Roma tomatoes, cut into wedges
1/4 cup shredded mozzarella
1/4 cup sunflower seeds
Directions:
1 Mix radicchio and lettuce together and arrange on plates.
2 Arrange tomatoes over lettuce. Sprinkle with cheese and sunflower seeds.
3 Serve with light vinaigrette of your choice.
