Spanish rice is incredibly easy to make at home and just as tasty as eaten out. Try this low-fat and filling side dish with chicken, fish or beans!
1 cup uncooked brown rice
2 cups water
1 small can (8 oz) no salt added tomato sauce
1 green bell pepper, diced
½ red onion, diced
Garlic and crushed red pepper to taste
1 Brown rice using cooking spray over medium heat in a non-stick skillet.
2 When rice is slightly browned; add water, tomato sauce, green pepper, onion, garlic and crushed red pepper.
3 Bring to a boil over high heat. Once boiling, reduce heat to low; cover and simmer until all of the water is absorbed, about 40 minutes. Fluff with a fork and serve.
4 Tip: Choose brown rice with the most fiber by comparing labels.
