Flaky and delicate sole fish is paired with rich crab and spinach for a quick 10-minute dinner that anyone can make.
Ingredients:
1 4-ounce sole fillet
1/4 cup cranned crab
1/4 cup spinach, frozen chopped
lemon pepper
lemon juice
Directions:
1 Preheat oven to 350 degrees. Thaw spinach and squeeze out excess water. Drain crab meat.
2 In a small bowl, mix the crab and spinach together. Place sole fillet on a plate and top with a thin layer of the crab/spinach mixture.
3 Roll sole fillet up and pierce end with a toothpick to secure. Sprinkle with lemon pepper and lemon juice. Transfer to a shallow baking dish.
4 Bake at 350 degrees for about 10 minutes or until fish flakes easily with a fork.
