2 4-ounce salmon fillets
Black pepper
3 tbsp flour
1 tsp chilled unsalted butter
1/4 cup vegetable broth
1/4 cup white wine
2 tbsp lemon juice
1 tbsp capers, drained
1 Season the salmon fillets with black pepper and dredge in flour, coating both sides.
2 Melt butter in large nonstick pan over medium-high heat. Cook salmon until done – about 4 minutes per side or until salmon flakes easily when tested with a fork. Remove salmon and place on a plate or platter.
3 Add broth, white wine and lemon juice to pan and bring to a boil for 1 minute. Stir in capers.
4 Pour the sauce over the salmon fillets.
5 Serving Suggestion: serve with ½ cup cooked whole wheat pasta and grilled or steamed asparagus.
