What's better during the holiday season than healthy cookies with a ruby red center!
Ingredients:
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons butter
1/4 cup unsweetened applesauce
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 1/3 cups rolled oats
1/2 teaspoon sugar-free all-fruit strawberry or raspberry jam for each cookie.
Directions:
1 Preheat oven to 375. In large bowl, mix flour, baking powder, baking soda and salt.
2 In a separate bowl, cream, applesauce, sugars, egg and vanilla together. Add flour mixture to applesauce mixture. Mix well.
3 Drop rounded teaspoons onto a cookie sheet that has been sprayed with non-stick spray, 2" apart.
4 Make an indent in each cookie with your thumb, and drop ½ teaspoon of jam into each cookie.
5 Bake for 10 to 12 minutes. Remove from oven and cool on cookie sheet.
6 ENJOY!
