Earthy mushrooms blended with herbs, cream cheese and vegetables make a sensational spread for sandwiches, crackers or veggies.

1 | Spray medium skillet with cooking spray, heat skillet over medium heat. |
2 | Saute onion, carrot, lemon rind, and garlic until tender. Remove from skillet. |
3 | Spray skillet again and add mushrooms, water, and herbs. Cook over medium heat until mushrooms are wilted and liquid is absorbed. Cool. |
4 | Process cream cheese, Parmesan cheese, and half of the mushroom mixture in food processor until smooth. |
5 | Stir in onion mixture, remaining mixture and parsley. Season with salt and pepper. Refrigerate 3 hours and then spoon into serving bowl serving with assorted vegetables or whole wheat pita chips. |
