|1||Cover cellophane noodles with boiling water and let stand for 5 minutes or until softened. Drain and rinse under cool water. Chop noodles.|
|2||While noodles are soaking, combine red onion, shredded carrots, soy sauce, chili paste and sesame oil in a large bowl, stirring with a whisk.|
|3||Add noodles and chicken to mixture and toss well to coat. Spoon about 1/4-1/3 cup into each lettuce leaf and roll up.|
|4||Yield: 6 wraps/ 1 serving: 3 wraps|
