Cabbage combined with fruit, yogurt and honey make this cole slaw one of a kind!
Ingredients:
1/2 head of cabbage shredded
1 16 oz can fruit cocktail, juice-packed, drained
1 cup nonfat plain yogurt
Juice of 1 lemon (or 2 limes)
1/2 cup honey
1/4 cup vinegar
1 banana, sliced
1/2 tsp salt
1/8 tsp pepper
3 Tbsp sliced and toasted almonds (optional)
Directions:
1 Shred cabbage. Combine all ingredients in a large bowl. Top with almonds (optional) and enjoy!
2 Serving Size: 1/2 cup.
