Served with fresh spinach, this flavorful entree salad is packed with nutrition - without the fat!
Ingredients:
Couscous Salad:
2 1/2 cups cooked whole wheat couscous
1/2 cup chicken, cooked and cubed
1/4 cup Greek olives,halved
1/2 cup sun-dried tomatoes, water packed, chopped
1/2 cup mozzarella, cubed
1/3 cup light or non-fat Italian salad dressing

Spinach:
3 cups raw spinach
1 teaspoon olive oil
Directions:
1 Combine cooked couscous, chicken, olives, sun-dried tomatoes, cheese and dressing together. Toss well.
2 Steam spinach and drizzle with olive oil. Serve beside the couscous salad.
3 ENJOY!
