Go ahead and have some fruit for dessert! Use light or sugar-free syrup to further reduce calories.

| 1 | Peel and core the apples, then cut into small chunks. Place in a 9" glass pie plate and toss with cinnamon. Stir well. |
| 2 | Cover with vented plastic wrap and microwave on high for 6 minutes, or until the apples are tender. Let stand for 5 minutes. |
| 3 | Place the oats in another 9" glass pie plate. Drizzle with maple syrup, oil and vanilla. Mix well. |
| 4 | Microwave on high for 1 minute. Stir well. Repeat 3 or 4 times, or until the oats are crisp and very lightly browned but not burned. Sprinkle over the apples. |
