Don't care for eggs? Let tofu fill in for popular scrambles - it's surprisingly similar and takes on the flavor of the zesty ingredients.
1 corn tortilla, warmed
1 green onion, sliced
1/2 cup chopped red bell pepper
1 tomato, chopped
1/4 cup ortega chiles
1 garlic clove, minced
1/2 teaspoon cumin
2 tablespoons reduced fat shredded cheese
1/4 package firm tofu, crumbled
2 tablespoons salsa
1/8 avocado, cubed
1 Saute veggies until tender. Add tofu, garlic and cumin and cook until heated through.
2 Top with cheese and place lid on pan to melt cheese. Place on tortilla. Top with avocado and salsa.
