Fresh, juicy peaches topped with crunchy gingersnaps is truly splendid. Serve with light whipped cream or low-fat frozen yogurt.
2 cups sliced fresh peaches
1/3 cup gingersnap crumbs
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
2 teaspoons light margarine or spread, melted
1 Preheat oven to 350 F. Arrange peach slices in an 8-inch square baking dish coated with cooking spray.
2 Combine gingersnap crumbs, cinnamon and nutmeg in a small bowl; mix well.
3 Add margarine and blend well. Sprinkle crumb mixture over peaches. Bake for 30 minutes.
