Making your own spice blends is a great way to use all of those spices in your spice rack! Use this in Indian recipes and add at the end of cooking.
|1||Place cumin, coriander, peppercorns, cardamom, cloves and cinnamon in a skillet over medium-high heat.|
|2||Cook until spices start to smoke and become aromatic. Constantly shake skillet for about 5 minutes then stir in nutmeg.|
|3||Remove from heat and let cool completely.|
|4||Place toasted spices in a spice or cleaned out coffee grinder and grind until finely ground.|
|5||Store in an airtight container. Suggested uses: Use as a spice rub over your favorite meats like chicken, pork, beef or seafood.|
|6||Yield: 1/4 cup. Serving Size: 1 teaspoon.|
