Lentil soup is hearty and filling enough to make a bowl a meal. Try this savory combination of lentils and veggies.

| 1 | Combine lentils and broth and simmer, covered for 2-3 hours. Add water as needed. |
| 2 | Saute garlic through carrots in olive oil. When lentils are done, add sauteed vegetables. |
| 3 | Continue to cook on low heat, checking often to make sure liquid has not evaporated (add more water if needed). |
| 4 | Add remaining ingredients and continue to simmer for 30 minutes. |
| 5 | ENJOY! |
