Ingredients |
- 2 cups fat free cottage cheese
- 3/4 cup egg substitute
- 3 tablespoons flour
- 1/2 cup chopped onion
- 1 cup shredded reduced fat cheddar cheese
- 1/2 of 10-ounce package frozen chopped spinach, partially thawed and drained

Instructions |
- Preheat oven to 350. Spray an 8 x 8-inch casserole dish with cooking spray.
- Combine cottage cheese, egg substitute and flour in a bowl. Add cheddar cheese and spinach; mix well.
- Place in casserole dish and bake, uncovered for about 1 hour or until lightly browned.
