Sweet berries tucked into a favorite breakfast treat make a great weekend breakfast idea. Freeze leftovers for weekday breakfasts!
Ingredients:
1/2 cup all-purpose flour
1/2 cup whole wheat flour
3 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1 teaspoon cinnamon
Pinch salt
1 egg, lightly beaten
1 1/4 cups low fat buttermilk
2 tsp canola oil
1 tsp vanilla extract
1 cup fresh or frozen mixed berries, thawed and drained
Directions:
1 Stir together dry ingredients in a medium bowl. In a separate bowl, combine egg, buttermilk, oil and vanilla.
2 Add wet ingredients to dry; stir until just moist. Gently fold in berries.
3 After spraying with nonstick cooking spray, heat a nonstick skillet or nonstick griddle over medium-high heat (to 375 degrees).
4 Pour 1/4 cup batter and cook for about 1 1/2 minutes until pancake begins to bubble.
5 Flip pancakes and cook 1 minute more, until lightly browned.
6 ENJOY!
