This tuna pasta salad is healthy and full of fresh veggies! Enjoy as a main dish with fresh fruit or a whole grain roll on the side.
Ingredients:
10 ounces of small shell pasta, cooked and chilled
1 sweet green pepper, diced
1 sweet red pepper, diced
1 cup diced cucumber
2 medium carrots, diced
1 celery stalk, diced
1 small red onion, diced
5 radishes, diced
1/4 cup lowfat cottage cheese
1 7 oz can of tuna, packed in water, drained well
Directions:
1 Combine chilled pasta and remaining ingredients in a large bowl. Toss to combine.
2 Serve with low-fat dressing if desired (not included in nutritional analysis). Serving Size: 1 cup.
