Add something new to your holiday dinner this year! Butternut Squash and Apple Soup will help fill you up and keep your taste buds happy too!
Ingredients:
1 tablespoon butter
1 onion, thinly sliced
2 Golden Delicious apples, peeled, cored and thinly sliced
4 cups pureed butternut squash (buy pre-packed or cook and puree in a food processor)
3 cups low sodium chicken broth
1 bay leaf
1 teaspoon crushed garlic
1/2 cup fat free half and half
Salt and black pepper to taste
Nutmeg
Directions:
1 In soup pot over medium heat, melt butter. Add onions and apples and cook, stirring occasionally, until softened, about 10 minutes.
2 Stir in squash puree, 2 1/2 cups broth, garlic and bay leaf. Bring to a simmer, reduce heat to medium-low and cook, stirring occasionally, about 30 minutes. Discard bay leaf.
3 Using a hand blender, puree soup in pot until smooth (or work in batches using a blender). Pour through a fine mesh sieve and set over a clean soup pot.
4 Stir in fat free half and half and remaining broth and warm soup if needed. Season with salt and black pepper. Garnish soup with a dash of nutmeg.
