This creamy, cheesy casserole is heavenly. Serve this as a tasty side dish or as part of low-calorie brunch.
Ingredients:
2 cups fat free cottage cheese
3/4 cup egg substitute
3 tablespoons flour
1/2 cup chopped onion
1 cup shredded reduced fat cheddar cheese
1/2 of 10-ounce package frozen chopped spinach, partially thawed and drained
Directions:
1 Preheat oven to 350. Spray an 8 x 8-inch casserole dish with cooking spray.
2 Combine cottage cheese, egg substitute and flour in a bowl. Add cheddar cheese and spinach; mix well.
3 Place in casserole dish and bake, uncovered for about 1 hour or until lightly browned.
4 ENJOY!
