Simple yet delightful! Different textures, colors and flavors make this salad a winner. You'll love the addition of strawberries and jicama!
Ingredients:
1/2 cup green leaf or spring mix lettuce
1/2 cup spinach leaves
1/3 chopped carrots
1/3 cup chopped tomatoes
1/3 cup sliced mushrooms
1/2 cup chopped jicama
1/2 cup sliced strawberries
1/2 cup garbanzo or kidney beans (choose lower sodium varieties)
2 tablespoons low-fat raspberry vinaigrette or poppy seed dressing
Directions:
1 Combine all ingredients and enjoy!
