This isn't your ordinary side of lima beans! It's simmered in tomatoes with chiles, red bell peppers and spices - making it scrumptious!
Ingredients:
Nonstick cooking spray
1 cup celery, chopped
1 cup onion, chopped
1 garlic clove, minced
1 cup chopped red pepper
10 oz package frozen lima beans, thawed
10 oz can chopped tomatoes with green chilies, undrained
1 cup low sodium vegetable juice
1 tsp basil
1 bay leaf
Directions:
1 Coat large nonstick skillet with cooking spray, heat until hot. Saute celery, onion, garlic, and pepper until tender crisp.
2 Add remaining ingredients stirring well and bring to boil. Cover, reduce heat to simmer until lima beans are tender. Discard bay leaf before serving.
3 ENJOY!
