This broth based soup is filled with whole grain pasta, lean ham, garlic and tender veggies - a delight any day!
Ingredients:
1 onion, chopped
1 large carrot, chopped
1 red bell pepper, chopped
1 stalk celery, chopped
1 bay leaf
1/2 teaspoon dried thyme
6 cups low sodium chicken broth
2 heads garlic, separated and peeled
1/2 teaspoon sugar
2 cups water
4 ounces extra lean ham, diced
4 tablespoons lemon juice
4 ounces small shaped whole wheat pasta
2 tablespoon chopped parsley
Black pepper to taste
Directions:
1 In a soup pot, combine all ingredients except lemon juice, ham, pasta and parsley.
2 Bring to a boil and simmer for 25-30 minutes until veggies are soft. Remove bay leaf.
3 Place in blender in batches and puree. Pour back into pot and bring to a boil.
4 Add lemon juice, pasta and ham and cook about 10 minutes or until pasta is tender.
5 Stir in parsley and black pepper to taste.
6 ENJOY!
