You've probably seen this calorie and fat laden salad in deli cases everywhere! However, now you can try it all trimmed down and healthy!
Ingredients:
2 large heads broccoli
1 cup grated carrots
1/2 cup diced red onions
1/3 cup unsalted sunflower seeds
1/2 cup raisins
1/4 cup meatless bacon bits
3/4 cup low-fat mayonnaise
1/2 cup non-fat plain yogurt
1/4 cup rice vinegar
1/4 cup Splenda or sugar
Directions:
1 Cut broccoli flower and stalk into bite size pieces and place in a large bowl.
2 Add grated carrots, onions, sunflower seeds, raisins and bacon bits. Mix well.
3 In a small bowl, mix mayo, yogurt, vinegar and sugar substitute or sugar - blend well.
4 Pour mayo mixture over salad and toss until broccoli mixture is well coated.
5 Refrigerate over night for best flavor.
6 ENJOY!

I enjoyed this recipe a lot. I substiuted turkey bacon for the bacon bits. I like the sweet and tart flavor blend.
